So i got a smoker for christmas and i wanna test it out before the summer. went and picked up just a lil 5lb pork shoulder, trying to think of a rub and sauce.

for rub i was thinking just a simple paprika , garlic powder , s&p and a lil bit of brown sugar. Im going to assume the brown sugar will give it a real crisp bark and shouldnt burn in a smoker...

as far as the sauce goes im semi stumped, i havnt made many sauces before so looking for idea, something with a nice subtle tang.

Depends on what kind of bbq you like. I'm partial to N.Carolina vinegar bbq. This is the recipe I use when I make bbq sauce (NC style.)

Ingredients:

1 cup cider vinegar
2 tablespoons salt
1 tablespoon brown sugar
1 teaspoon cayenne
1 teaspoon red pepper flakes

Preparation:
Mix all ingredients together. Let stand as long as possible, at least 1/2 a day, but the longer the better. (I prefer to 2x up the recipe and let it sit a week or longer.)

I like to change it up with different peppers (dried and fine chopped) depending on how hot I want it. This works great as a mop or a pulled pork / chicken finishing sauce.

One that I make and enjoy is a Chipotle Red Wine sauce.

1/2 cup Ketchup
1/3 cup Red Wine
1 Tbsp Olive Oil
1 Tbsp Soy Sauce
1 Tbsp Brown Sugar
1 Tbsp Vinegar
1 Tsp Worcestershire
1 Tsp Garlic Powder
1/4 Tsp Cumin
1/4 Tsp Chipotle chili/powder

Combine the olive oil, garlic, chipotle and cumin in a saucepan and make sure it heated through while stirring, about 1 minute. Add red wine and brown sugar and let it simmer for 2-3 minutes. Add ketchup, soy sauce, vinegar and Worcestershire and let it simmer for another 2-3 minutes. Let it cool down and it's good to go.

Damn I read this way too late but Oken's recipe sounds along the lines of what I personally like since I'm on a chipotle kick. It depends on what you like... the thicker and glazier sauces are usually heavier on the sugar with a vinegar base and the more acidic ones are my personal taste.

That sauce has good tang and a little bit of kick, although you'll probably want to use more sugar/ketchup if you want it to be thicker.
